Plesk is stable on Hyper-V yes, there are still some bugs that crop up, but nothing too much 
Mostly in backup/restore we have largest/time consuming of bugs. (this is for people with plesk on virtuozzo moving to Hyper-V) We’ve not run into a single show stopper bug on Plesk, just it is a single server CP. Of course if you just have a single domain, a 10 domain license works, and you don’t need SQL Server management of power pack for a handful of DBs either, easy enough to add in Management Studio.
