Well I use Microsoft Visual Studio 2003 for all of my .NET apps and SQL Analyzer/Enterprise Manager for all of my sql server scripts and tuning, aside from that Intellij for all J2EE dev. That's about it. Small set of tools.
Syntax highlighting, (S)FTP support, tabbed multiple open files, project workspaces, code folding, macros, etc. Still have complete control, but in a slightly less stone age way
Eclipse with the CFEclipse plugin for ColdFusion development, SQL client tools (enterprise manager, query analyzer) for MSSQL related database stuff, AquaData studio for MySQL needs.
