mail dns records on winvps with multiple IPs

i recently moved a client to a dedicated IP on my winvps server to accomodate SSL. But it's not clear to me how I should tweak the MX records in their DNS, if at all. PLESK defaults to changing everything in the domain's DNS to the unique IP, but there's no rDNS established for that IP.

So, should the MX and mail.domain.com records continue to point to the server's primary mail server (incl. the PTR record?) -- or should I leave the mail records to point to the new, unique IP and then get an additional rDNS entry added upstream to provide the proper reverse IP for the domain?
 
we can provide the rDNS for the ip without a problem. How you want to do it is your choice :)
