Persits ASPEmail - what should the host be?

I'm in the process of sorting out my email code is asp using the Persits ASPEmail component. I remember one of the gurus on the forum saying one should use

mail.host="mail.mydomain.com"

so that's what I've done. It all works fine, but when examining the headers of the received test email to myself is says

Received: from win8.m****here.biz (HELO user-xa5g8qlht5) (204.10.106.125)
by mail.m****here.biz with SMTP; 14 Aug 2005 07:27:41 -0000

No mention of my "mail.mydomain.com".

I was just wondering why this is, and if I've done anything wrong?

you will always get the real source as well as the relay, as it helps in tracking spam(abuse) complaints.
