Secretly forward sent emails?

A client wants to know if emails sent from his office by his secretary can be secretly forwarded to his own email address - ie spy on his employee. Is this possible (ethics aside)?

This is possible on a VPS. On a Windows VPS with a single domain, it should be easily possible with regular Plesk configuration and hmailserver.

nearly impossible if she uses https with gmail/hotmail etc…
