Server Relocation - Wednesday 2AM - 4AM

I understand that the incoming mails would be caught by one of the other mail servers. What would hapend with the outgoing? Should I tell my clients to refrain from sending mails during the outage?
I ask this because for me it's the worst timing, as it would be somewhere between 9-11 where everybody comes into office and want to sort the things X(
 
If they use JodoHost for SMTP server, I don't think they'll be able to connect to it during the downtime. The downtime of each individual server should be much shorter than 2 hours though.

I understand zaboss. Its tough to decide what time to do these things at. But the time we have chosen has the least traffic on our servers.

We'll have people complaining whatever time of the day we do it
 
That's for sure and I fully understand.
So I should consider Subspace answer as correct? The mail servers would work only for incoming, but no outgoing?
